kale, corn, tomato and quinoa salad

School starts again tomorrow.

In an effort to keep summer alive, make a salad that uses her flavors:

Add one pint halved cherry tomatoes, two ears fresh corn, black beans, sautéed onion, garlic, and kale, lime vinaigrette (fresh lime juice, good olive oil, salt pepper, cumin, red pepper) to 1 cup cooked quinoa. Top with avocado and cilantro.

And breathe in and out and take life one day at a time. A new school year begins!
