dave-approved butternut squash soup

my lovely ma requested recipes for the food postings. I tend to improvise, but am happy to share:
- sautée 1/2 onion in olive oil
- peel and cube 1 butternut squash, grate a chunk of fresh ginger, and then add to the pot along with 4 cups of water/broth and a pinch of nutmeg
- simmer for 20-30 min and then blend (I love the immersion blender my mom gave to me)
- salt and pepper to taste
- top with shaved parmesan and enjoy!
