- make mashed potatoes with 4 cubed parsnips, 4 cubed potatoes, butter, milk, salt and fresh pepper.
- caramelize 1 onion, then add 2 cloves fresh garlic and a container of fresh mushrooms. let cook down, then add a splash of red wine, a bit of mustard, a splash of soy sauce, salt, and pepper. add some frozen peas and 12 oz of seitan and let the flavors meld.
- serve the mushroom/seitan mixture atop the mashed potatoes for an hearty winter dinner.
