butternut squash mac + "cheese"

i made a vegan "mac 'n cheeze" based on this recipe.

it was surprisingly delicious and really healthy. nutritional yeast, almond milk, and butternut squash made a convincingly creamy sauce.

the broccoli/cheese reminds me of childhood.

i made it fancy by topping it with truffle oil and serving it with an arugula salad with feta and clementines.
