shiitake mushroom noodles















dave exclaimed, "this tastes like japan!" upon first bite, so this is tasty.

it's such an easy weeknight meal.

i sauteed a pack of sliced shiitake mushrooms in 2 tbsp sesame oil and a splash of olive oil while waiting for a pot of water to boil. 

after 10 minutes, i added small cubes of drained tofu to the mushrooms along with soy sauce, salt, and fresh pepper.  i cooked the mushrooms and tofu until they absorbed all the liquids.  cooked whole wheat linguine (inexpensive substitute for soba noodles) according to package and then mixed the cooked noodles into the wok with mushrooms and tofu.  seasoned according to taste.

topped with toasted sesame seeds, chopped green onion, and cilantro.
