polenta w/ tuscan white beans & zucchini salad


the polenta was pan-fried, but the real star was the super simple (raw) zucchini salad.

recipe:

1 zucchini, halved
good olive oil
rice vinegar
salt & pepper

use a vegetable peeler to create ribbons of zucchini and then toss with the marinade.
(ahh summer!)
