fall veggie bowl
After returning last night from New York at 3:30 a.m., the last thing
I wanted to do today was cook. Thank goodness for leftover roasted
veggies, or we would've had pizza.
This meal was delicious and consisted of roasted beets, sautéed spinach, quinoa, and a vinaigrette I threw together.
Sometimes simple food is best, as is home.
