roasted veggies and lemon sesame quinoa

It has been a simply lovely vacation. We had two bonus snow days that made it a solid two weeks.

I feel rested and recharged.

For Sunday Supper before heading back to reality, I roasted all of my favorites (beets, broccoli, chickpeas, and red onion) and served them over a lemon-sesame quinoa.

The best part was sharing with people I love.

The second best is leftovers. Let the remainder of the 2013-2014 school year begin!
