It has been so busy around here with a baby (4 months old today!), Smokey, returning to work next week, and Dave's back surgery. There is a lot on my plate.
To simplify meals, I try to multitask. Like when I made this spinach basil pesto with roasted veggies last night, I took advantage of a hot oven and roasted some sweet potatoes. This morning they were fried up with onions and garlic to make a sweet potato hash.
